Turkey Style Stew with Dumplings

One of the constant complaints that I always hear about holiday leftovers is that people tend to tire quickly of turkey sandwiches. This does not have to happen since there are a number of ways that the leftover turkey can be used. You can add some variety to those usual boring sandwiches by making a stew with your turkey. It is easy, quick and extremely tasty, taking a mere hour to cook. Here are some simple instructions on how you can make it.

Ingredients

1-1/2 pounds of turkey, sliced into small 1-inch pieces

3 teaspoons of olive oil

3 sliced carrots

1 small quartered onion

3 stalks of sliced celery

1/4 teaspoon of Chives

1 teaspoon of Parsley flakes

4 cups of water

1 chicken bouillon cube mixed with 16 ounces of water

3 tablespoons of Corn Starch

Jane’s Crazy Salt and pepper to taste

Pennsylvania Dutch Pot Pies Square Noodles as desired

Directions

In a large cooking pot, with the olive oil, sauté the turkey pieces over a medium-high heat until it is lightly browned. Add the carrots, onions and celery to the mixture and continue to cook. Add the Chives and Parsley flakes, along with the 4 cups of water and the two-bouillon cube. Continue cooking and bring to a boil. Reduce the heat to a simmer, covered the pot for 30 minutes until the vegetables are tender.

Mix corn starch and some water together and mix until you have a smooth consistency and stir into turkey mixture. Again, bring to a boil. Continue to cook and stir about 2 minutes, until the stew begins to thicken. Stir in the Jane’s Crazy Salt and black pepper.

Take the Pennsylvania Dutch pot pie square and drop them into the stew, Cover and simmer 10 minutes until the dumplings are tender. As an option, you could add peas or corn for an added treat.
